A collaboration with our gastronome friends at Aløft, developed in partnership with the core team from Hobart's pre-eminent restaurant. A Pét-nat Apple Cider that has been wild fermented, selected heritage varieties of apple including Kingston Black, Foxwhelp and Bulmers.
As a bottle-conditioned cider, this will be best opened after 30 November 2023. The magic of this cider will be revealed after the secondary fermentation in bottle, combining the special ingredients of yeast and time.
If you want a crystal clear cider store it upright and don’t agitate the bottle before pouring. If you’d like to bring out some of the different characteristics from the yeast, feel free to roll the bottle before pouring which will reintegrate the yeast and make a cloudy cider.
Aløft x Willie Smith's Pét-nat Apple Cider - quality produce, nature and people are the building blocks of this collab.
This cider provides a deep ochre hue with a bead that simply sparkles. Striking earthy aromas of stable straw and forest floor.
After fermentation, when the barrels were rolled back in from the orchard wild flavours developed into subtle mandarin peel, earthy orchard notes and a tight minerality. Delicate tannin contributes to a lingering finish.
Naturally funky, but never flawed.
